Why it matters
The producer
Mads Groom Andersen started pressing apples from his own garden in 2009 with no plan beyond the experiment itself. Six years later he co-founded a formal winery in Knebel, a small town on the Djursland peninsula in eastern Jutland, and the bottles went almost immediately to Michelin-starred restaurants across Scandinavia. Andersen Winery makes one kind of wine: sparkling apple wine, produced by méthode traditionnelle, the same second-fermentation process used in Champagne. The range runs to three bottles, each named for a Scandinavian woman and built around a different apple variety composition.
The winery sits in a part of Denmark with no established wine tradition. That is the point. Andersen identified Nordic heritage apple varieties as a serious raw material for a structured, bottle-fermented sparkling wine rather than a farmhouse product, and the Michelin placements came before the winery had finished scaling.

Where the wines begin
Knebel sits on the Djursland peninsula, a knuckle of land that pushes into the Kattegat on Denmark's eastern coast. The peninsula has a maritime climate, cold winters, and a relatively short growing window. It is not a region historically associated with any form of wine production.
The Andersen bottles do not carry appellation or terroir language because none exists for Danish apple wine at this scale. What Knebel supplies is an agricultural context: orchards with established heritage varieties that carry naturally high sugar, sharp acidity, and aromatic character suited to a second-fermentation sparkling method. The label language is Swedish-Danish, Mousserande Äppelvin, meaning sparkling apple wine, which correctly describes what is in the bottle without borrowing from a category the producer does not belong to.

Vineyards and cellar
Andersen produces all three bottles by méthode traditionnelle, the bottle-fermentation process in which a second fermentation happens inside the sealed bottle, creating natural carbonation and building yeast contact over the ageing period. This is the same method used in Champagne production, and it is a more labour-intensive and capital-heavy process than tank carbonation.
The Sur Lie designation on the third bottle signals extended ageing on yeast lees after that second fermentation. Extended lees contact adds bready, autolytic depth and textural weight to a wine that would otherwise express only the sharp primary fruit character of Belle de Boskoop apple. The single-varietal bottles, Ingrid and Sur Lie, isolate one apple's character entirely. The blended Sigrid uses three varieties in fixed proportions to balance aromatic weight, body, and acid frame.

The range in view
The range consists of three bottles, all from the 2021 vintage at 11.5% ABV, all labelled Mousserande Äppelvin.
Ingrid Mousserande Äppelvin is 100% Ingrid Marie apple, a Danish heritage variety with high natural sugar and a sweet-tart balance. The single-varietal format isolates Ingrid Marie's ripe, aromatic character: the wine shows concentrated apple fruit and floral lift without the structural intervention of blending.

A bottle to begin with
Start with the Sur Lie Mousserande Äppelvin. It is 100% Belle de Boskoop, aged on yeast lees after the second fermentation in bottle, and it shows what méthode traditionnelle does to Nordic apple fruit when the process is given time. The Belle de Boskoop is a naturally sharp, high-acid variety, and the lees ageing complicates it: ripe orchard apple on the nose, a toasty bready note underneath, and a clean, dry finish with real length. It is not a cider, not a novelty, and not a sweetened fruit wine. It behaves like a sparkling wine from a serious producer who chose the method deliberately and selected the variety to match it.
