The producer

Avinyó is a Cava estate at Avinyonet del Penedès, a village in the Penedès hills of Catalonia, working from a farmhouse the Esteve family has occupied since the 16th century. The estate is an Elaborador Integral: grapes grown, vinified, and aged on the same property, from the same four named parcels, without blending in reserve solera wine to correct year-to-year variation. Every bottle carries the de Guarda Superior classification and a single vintage date.

The estate only started releasing its own labeled Cava between 1979 and 1982, after generations of selling fruit to cooperatives. The turn toward estate production was not driven by the market. It was a deliberate refusal of the solera method that smooths most commercial Cava into a reliable house character. Without that correction, each release reflects the conditions of its year. The first official market launch in 1982 ran to 2,418 bottles. The Esteve family now farms approximately 40 hectares across four parcels and certifies the entire holding organic.

Where the wines begin

Avinyonet del Penedès sits in the interior of Catalonia, in the Penedès hills inland from the Costa Daurada coast. Cava as an appellation is defined by method rather than a single delimited zone: traditional method sparkling wine, second fermentation in bottle, then ageing on lees. The physical address matters because elevation shapes the base wines. Higher ground in Penedès preserves the acidity that holds Cava together through its ageing period on lees and keeps the finished wine from going flat and heavy.

The de Guarda Superior classification on every Avinyó label signals three things: the wine is single-vintage, the wine is vintage-dated, and the wine has spent at minimum 18 months in contact with lees before disgorgement. Across most commercial Cava production, reserve solera wine fills the gap between harvests and softens the effect of weaker vintages. At Avinyó, removing that option means each vintage is exposed. The label carries the year because the year is the entire point.

Organic farming covers all four parcels. The estate uses no synthetic pesticides, herbicides, or fertilizers across approximately 40 hectares. Single-vintage harvesting governs the entire calendar: grapes from a given year stay in that year's wine.

In the cellar, second fermentation happens in bottle, the traditional method required by the Cava appellation. After fermentation, the bottles go on lees for a minimum of 18 months before disgorgement. Lees contact over that period adds the pastry and brioche character that fills out the mid-palate and rounds the mousse. No reserve solera wine enters the process. Without a blending reserve to draw on, the fruit selection and farming in each harvest carry more weight in the final wine.

The range in view

The range is built on Xarel·lo, Macabeo, and Parellada, the three traditional Cava varieties. The Reserva Brut assembles them at 60% Xarel·lo, 25% Macabeo, and 15% Parellada. Xarel·lo at that proportion gives the wine its body and the slight waxy texture that distinguishes Penedès Cava from the leaner Champagne house style. Macabeo brings floral lift and fresh fruit. Parellada adds the herbal and citrus edges that keep the wine from going soft after two years on lees.

All wines in the range carry the de Guarda Superior classification, which means all are single-vintage, all are vintage-dated, and all have spent at minimum 18 months on lees. Extended-ageing and parcel-specific bottlings sit above the Reserva Brut in the range. The La Fassina parcel produces a Pinot Noir wine separate from the traditional Cava trio.

A bottle to begin with

Start with the Reserva Brut. It is 60% Xarel·lo, 25% Macabeo, 15% Parellada, a single vintage, certified organic, and aged 18 to 24 months on lees before release. The mousse is fine and creamy, the palate built around white peach, almond, and lemon peel, with a mineral close that carries through to the finish. It is not a blended house-style Cava. It reads as one year from one estate in Avinyonet del Penedès, and that is the entire argument the bottle is making. Begin here.
