The producer
The Carrau family did not stumble into the far north of Uruguay. In 1973, researchers from the University of California Davis approached the family as part of a project to identify the best vine locations in South America using scientific method. The site they identified was Cerro Chapeu, in Rivera department near the Brazilian border, a region the family then began pioneering in 1975. That sequence matters: not a hunch, not a heritage parcel, but a scientifically selected address that became Uruguay's first vineyard chosen on analytical grounds.
The family's winemaking runs considerably further back. Francisco Carrau Vehils began the tradition in Catalonia in 1752, and the Carraus arrived in Uruguay in 1930. Rivera was the frontier move, led by Quico Carrau Pujol, the generation that believed the country's most interesting terroir was still to be found, if you looked in the right place.

Where the wines begin
Rivera sits in Uruguay's far north, sharing a border with Brazil. It is warmer and drier than Canelones, the coastal heartland of Uruguayan viticulture, and its continental character drives a different ripeness curve. Grapes ripen more fully here, with more concentrated primary fruit and, in the right soils, firm acid lines that keep wines from going soft. The border proximity is not a curiosity: it marks a genuinely different growing environment from the river-cooled, maritime-influenced south.

The red sandy soils drain fast enough that vine stress is built into the site. Low organic matter and high iron content push the vines to work for nutrition, concentrating what ends up in the grape rather than producing large crops of dilute fruit. The soils' age adds a mineralogical depth that younger alluvial or volcanic soils do not carry.
The winery's four underground floors operate on gravity flow throughout the production process. Fruit arrives at the top level; juice, must, and wine descend by gravity through fermentation and storage. Pumping introduces mechanical shear force and oxidative exposure at every transfer. Eliminating pumps preserves more of the aromatic compound and textural material that arrives with the harvest. Wine moves by gravity through the winery.

The range in view
The confirmed bottle from Cerro Chapeu is Folklore Carbónica, a red wine made by carbonic maceration. Carbonic maceration involves whole-berry fermentation in a carbon dioxide atmosphere before the grapes are pressed, a method that produces soft tannins, vivid primary fruit, and a characteristic aromatic lift of red berry and spice rather than the structured extraction of a more conventional red. The method suits the sandy soils well: the terroir already pushes toward defined fruit and acidity rather than heavy body, and carbonic maceration keeps those qualities at the front of the wine.
Each bottle of Folklore Carbónica sold supports Ambá's rewilding initiative in Uruguay, a conservation programme that works to restore native habitat. The wine carries both a style and a social purpose.
