Why it matters

The producer

The Pons family has farmed the land around a historic masía called Cal Montargull in the village of Granada del Penedès for over 250 years. For most of that time, the harvest left the estate in bulk, sold to négociants without a family name on a single bottle. In 1992, that changed. The family established Miquel Pons as a commercial cava brand, began bottling their own wine, and started selling it under their own label.

The estate now farms 80 hectares of vineyard, 60 owned and 20 leased, all under certified organic viticulture. Yields are capped at 10,000 kilograms per hectare, below the level the Cava DO requires, and every tier in the range ages on lees longer than the minimum the appellation demands. The grapes are the three classic Catalan varieties: Macabeo, Xarel·lo, and Parellada, all grown on the estate.

Where the wines begin

Granada del Penedès sits in the Penedès region of Catalonia, southwest of Barcelona. The Penedès plateau rises from coastal lowlands toward the Montserrat massif, and the elevation brings cooler nights and longer growing seasons than the Mediterranean coast below. Parellada in particular holds its acidity at higher altitude, and that natural freshness runs through every tier in the Miquel Pons range.

The Cava DO spans much of Catalonia, but the core production zone has always been anchored in the Penedès. A cava label signals traditional-method sparkling wine made from the local grapes, with secondary fermentation in the bottle, extended lees ageing, and disgorgement before sale. The long ageing floors at Miquel Pons, from 15 months at the entry tier to 44 months for the Gran Reserva, are built from the same Penedès raw material: estate fruit, three grapes, one organic property.

Organic certification covers the entire 80-hectare holding. No synthetic herbicides, pesticides, or fertilisers are used, which in a region with warm, dry summers means relying on cover crops and careful canopy management to maintain soil health and vine balance. The yield cap of 10,000 kilograms per hectare concentrates flavour in the fruit that remains: lower crop loads push the vine's energy into fewer grapes, giving each more development time on the vine before harvest.

The range in view

The range runs four tiers, all built from Macabeo, Xarel·lo, and Parellada, and all made by the traditional method under the Cava DO.

The Brut Cava is the entry-level bottling, with a minimum of 15 months on lees. It carries aromas of tangerine and lemon curd, with hazelnut from the lees contact, and finishes with a creamy mousse. It is the most approachable tier in the range, with the least developed secondary character.

A useful way in

A bottle to begin with

Start with the Brut Nature. It is the clearest expression of what the estate grows and how it is made: the three Penedès grapes at 50/40/10, no dosage, 18 months on lees, 6.5 grams of acidity, and 0.6 grams of residual sugar. Nothing in the bottle softens the picture. The pale yellow colour with green tints signals fresh, high-acidity Penedès fruit. The mousse is fine and creamy, a product of the traditional method and the lees time, not of added sugar. The finish is dry, with a slight chalky grip from the Xarel·lo and a citrus freshness from the Parellada that lingers cleanly.
