Why it matters

The producer

Arrayán built the wrong winery first. When José María Entrecanales and María Marsans founded the estate in 1999 on the La Verdosa dehesa outside Toledo, they hired Australian viticulture consultant Richard Smart to design the vineyards. Smart planted 24 hectares of Cabernet Sauvignon, Merlot, Syrah, and Petit Verdot: a credible international template for a new Spanish producer with serious ambitions and a clean piece of land.

Ten years later, that blueprint was gone. In 2009, Maite Sánchez arrived as Technical Director and turned the operation around. The Bordeaux varieties gave way to Garnacha sourced across three geographically distinct zones, plus an experimental programme of rare indigenous varieties that almost nobody else in Castilla-La Mancha was researching. Sánchez's redirection was not a market calculation. It was a commitment to Garnacha grown at altitude, fermented with indigenous yeasts, and given time in French oak and bottle before release.

Where the wines begin

DO Méntrida sits northwest of Toledo in Castilla-La Mancha, on the approaches to the Sierra de Gredos mountain range. The designation covers a wide territory, and elevation within it varies considerably. Most of the DO sits at moderate Continental altitude, warm and dry in summer, cold in winter.

Arrayán works across three zones that capture that elevation range. The La Verdosa estate, a traditional dehesa with woodland and wildlife near the Alberche River, sits at 470 to 510 metres. El Real de San Vicente, also within Méntrida, rises to 750 metres. Cebreros, in the Sierra de Gredos, reaches 980 metres and sits on schist.

Organic viticulture is practised across the La Verdosa estate without herbicides or insecticides. Biodiversity is built into the farming approach: the dehesa character of the land, with its mixed woodland and pasture ecology, is maintained as part of how the vines are managed, not set aside from it.

In the cellar, La Suerte Garnacha undergoes cold pre-fermentation maceration for three days before spontaneous fermentation with indigenous yeasts at controlled temperature. Maceration on the skins runs for twenty days. After pressing, the wine spends twelve months in 300 and 500 litre French oak barrels, then a further twelve months in bottle before release. The two-year maturation cycle means the wine arrives with integrated oak and enough time for the skin tannins to settle into the mid-palate rather than sitting raw on the finish.

The range in view

Arrayán's range is anchored in Garnacha across the three zones. La Suerte is the wine where the production philosophy is most fully expressed: Garnacha from the multi-zone sourcing geography, with the full cellar treatment of cold maceration, indigenous yeasts, extended skin contact, French oak, and bottle ageing. It is a red wine of real depth, with the twenty-day skin maceration delivering grip and body, the French oak adding spice and roundness, and the bottle ageing tying the elements together before the wine leaves the cellar.

La Suerte Albillo Real works the indigenous white side of the range. Albillo Real is an ancient Castilian variety grown across central Spain and the Canary Islands, rarely seen as a varietal wine. The 2023 Méntrida bottling presents with a saline nose and oyster shell character, pointing toward mineral freshness rather than fruit weight.
