Why it matters
The producer
Bodegas Nivarius is the only winery in the Rioja DOCa built entirely around white wine. Javier Palacios, a businessman from Albelda de Iregua, looked at the Iregua Valley's cool north-facing slopes and high elevation and decided the region's white grapes had been undervalued.
The bodega sits in Nalda, a village in Rioja Alta, and farms 60 hectares of certified organic vines across elevations from 650 to 840 metres. Three grapes anchor the range: Viura, the historical white of the region; Tempranillo Blanco, a natural white mutation of Tempranillo that now carries its own Rioja DOCa designation; and Maturana Blanca, an indigenous variety that had nearly vanished from the region before Nivarius planted it in commercial volume. The estate's holding of Maturana Blanca is likely the largest single planting of the variety anywhere in Rioja.

Where the wines begin
The Iregua Valley cuts south through the Sierra de Cameros before opening onto the Ebro plain near Logroño. Most wine buyers picture Rioja as warm, low-altitude vineyard land producing broad, oak-aged Tempranillo. The Iregua Valley runs cooler and higher than that picture allows.
Nivarius farms the valley's north-facing slopes between 650 and 840 metres above sea level. At that elevation, ripening slows, growing seasons lengthen, and the grapes hold acidity that the warmer valley floors cannot preserve. The cool nights sharpen aromatic character in Tempranillo Blanco and pull smoky, mineral notes from Maturana Blanca. White wines from this part of Rioja Alta carry a freshness that rarely appears in the red-wine bottles the region is known for internationally.

Vineyards and cellar
All 60 hectares are certified organic. Traditional horse-powered ploughing replaces mechanical tillage in the parcels, which reduces soil compaction and keeps the root environment undisturbed. Each small plot is vinified separately, which means individual parcel character survives through fermentation rather than being blended away at the crush pad.
Fermentation begins with indigenous yeasts in large wooden vats. No commercial yeast cultures are introduced. This slows and extends fermentation, producing wines with more complex aromatic development than fast-fermented neutral-yeast versions. After fermentation, the wines move through progressively larger barrels before final assembly in concrete vessels. Concrete is neutral: it neither adds oak character nor strips the aromatic freshness that the cooler elevations produce. The Edición Limitada bottling follows a slightly different path, with whole-cluster pressing and low-temperature fermentation in French oak barrels before a nine-month ageing period.

The range in view
The range is organised around three grapes at different tiers. Entry expressions use Viura, the most planted white grape in Rioja, which produces wines with citrus character and firm acidity on these cooler slopes. The Edición Limitada is a blended cuvée of Viura and Maturana Blanca: aromatic, moderately full-bodied, with yellow apple, gooseberry, smoky mineral, marzipan, and lemon notes from the 2020 vintage, underpinned by firm acidity and the texture that nine months of oak ageing adds without dominating the fruit. Tempranillo Blanco appears as a single-variety bottling, leaner than the Viura-led wines, with tighter fruit and more pronounced mineral lift. Single-vineyard expressions from micro-plot vinifications form the upper tier, each bottled separately to preserve the distinction between parcels farmed at different elevations and aspects.

A bottle to begin with
Start with the Edición Limitada. It blends Viura and Maturana Blanca, so both of the estate's core grapes are in the glass at once. Whole-cluster pressing keeps phenolic grip low while preserving aromatic purity. Nine months in French oak adds texture and the marzipan note without covering the primary fruit. The Edición Limitada has moderate-to-full body, firm acidity, and notes of fresh citrus, gooseberry, and smoky mineral. It costs less than the single-parcel expressions and teaches more about what Nivarius is doing than any one-variety bottling can.
