The producer
Rafael Cañizares was born in 1967 in Las Mesas, a small town sitting on the high Castilian plateau in DO La Mancha. He comes from four generations of winemakers, but when he founded Bodegas Volver in 2004 he did something his predecessors had not: he built an estate to bottle wine from his own vineyards rather than selling grapes or bulk into the regional trade.
The centre of that estate is Finca los Juncares, a 29-hectare single vineyard planted in 1957 at 660 metres above sea level. Its vines are old enough to carry deep root systems into sandy limestone soils so poor and dry that other growers considered them more trouble than they were worth. Those roots pull out intensity that more productive soils cannot give. The Volver label draws from this parcel. Every bottle is the consequence of that 2004 decision and the 1957 planting that preceded it.

Where the wines begin
DO La Mancha covers the broad plateau of central Spain, one of the largest wine appellations in the country by area. Las Mesas sits within it at around 600 metres elevation, high enough for the plateau's continental climate to produce large swings between daytime heat and night-time cold. Those swings slow ripening and preserve acidity in the grapes even through the dry, sun-intense Castilian summer.
The plateau is flat and open, with little shelter. Rainfall is low. Vines survive through drought tolerance built over decades, and the driest, poorest soils push yields down further. Finca los Juncares, at 660 metres, sits at the upper end of this elevation band. Its yields of one to two kilos per vine are well below the regional norm. That concentration shows in the weight and depth of the Volver red.

Vineyards and cellar
The Volver red is sorted at the winery before fermentation. Grape varieties go through fermentation separately, in open-top stainless steel tanks with indigenous yeast from the estate's own microbial environment. Indigenous yeast fermentation takes longer than cultured yeast and produces a more complex aromatic picture tied to the specific place rather than a standardised flavour profile.
Open-top fermenters allow physical contact between the fermenting juice and the grape skins during the process, which draws out colour, tannin, and the structural compounds that give the wine its grip on the palate. The 1957 vines at Juncares, producing one to two kilos per plant, deliver a small volume of intensely flavoured fruit. That concentration enters the cellar before any winemaking decision is made.

The range in view
Tempranillo is the dominant grape across more than 100 hectares of estate vineyards in DO La Mancha at around 600 metres. The Volver red is the highest-expression wine in the range, drawn from Finca los Juncares and carrying the character of the 1957 vines in concentrated, dark fruit with firm tannin and the dry finish that comes from low yields and indigenous yeast fermentation. It is a wine with grip and depth rather than softness, shaped by altitude, old roots, and minimal intervention in the cellar.
Below the Volver single-vineyard tier, the estate produces wines under additional labels across the La Mancha portfolio, allowing the range to span entry-level and premium positions within the same appellation.
