The producer
Since 1316, the Stiftung Bürgerspital zum Heiligen Geist has used winemaking to fund the hospital care it was founded to provide. The estate's 120 hectares of vineyard are one of the largest holdings in Germany, and for more than seven centuries this charitable foundation has kept its wines and its civic mission under the same roof.
The Bürgerspital owns the Stein-Harfe, a Grosse Lage monopole parcel within the Würzburger Stein. A monopole means one estate controls the farming, winemaking, and bottling of that site entirely; no other producer can use the name. The Stein is one of Germany's most storied vineyard addresses, and the Stein-Harfe sits at its centre. The estate also holds VDP membership, confirmed since 1955 when it became a founding member of Germany's top-tier quality association.

Where the wines begin
Ninety percent of the Bürgerspital's vineyards lie in Würzburg itself, on the banks of the Main River. Würzburg is both the city and the appellation, and the concentration of holdings so close to the river gives the estate a coherent limestone and loess terroir base rather than a scattered patchwork across the region.
The Würzburger Stein is the most famous single vineyard in this part of Franken, a south-facing slope above the city that produces wines with marked mineral character. The Stein-Harfe parcel occupies its core. Because the estate farms organically with low intervention in fertilisation, the vines draw on the limestone ground directly, and the mineral character recorded in the Stein-Harfe Silvaner reflects that relationship between soil and farming choice.

Vineyards and cellar
Of 120 hectares, Riesling occupies 30 and Silvaner 27, with Müller-Thurgau at 10 hectares. These are the three main varieties, though the range runs across other plantings as well. Natural viticulture with restrictive fertilisation governs the vineyard work, and certified sustainable and organic processes extend into the cellar.
Riesling production uses short maceration, temperature-controlled fermentation, and storage in stainless steel tanks, a method that keeps the variety's aromatic clarity intact. The Silvaner GG from Stein-Harfe receives barrel ageing, which adds the nutty and yeasty tones that appear alongside its mineral character. The estate wines are dry throughout the range, produced without fining or filtering where the VDP classification framework demands that approach.

The range in view
The range organises by VDP classification tier. Gutsweine are the estate-level bottles, dry, approachable, and built for everyday drinking. VDP.Ortswein wines step up to village-level Würzburg address, with more site specificity and a narrower flavour register. VDP.Erste Lage wines come from classified vineyards and show greater density and complexity. At the top, the Grosse Gewächs, marked GG, come from Grosse Lage parcels including the Stein-Harfe monopole.
The Silvaner GG from Stein-Harfe is the estate's most distinctive bottle: barrel-aged, intensely mineral, dense, and built for extended ageing. The 2021 VDP.Erste Lage Silvaner from Würzburg Stein shows what the tier below delivers: firm and bone-dry in the mouth, nutty and yeasty tones alongside tart vegetable notes and very fine acidity. The VDP.Ortswein Silvaner is lighter and more herbal, with polished acidity and a slender, invigorating finish suited to the table.

A bottle to begin with
Begin with the Würzburg Silvaner VDP.Erste Lage Trocken rather than the GG. It is the clearest statement of what the Würzburger Stein limestone does to Silvaner below the single-monopole level: firm and dry in the mouth, nutty and yeasty from its barrel ageing, with tart vegetable aromas and fine acidity that stays taut rather than broad. The bone-dry character and mineral grip give a working sense of how the Bürgerspital's vineyard work and low fertilisation translate into texture. After that, the Stein-Harfe GG's greater density and intensity reads as a deepening of the same argument rather than a departure from it.
