Why it matters

The producer

Ca' del Bosco farms 253 certified organic hectares in Erbusco, a village within the Franciacorta zone in Brescia province, and has become the most technically ambitious house in an appellation that takes its method seriously. Franciacorta is Italy's only DOCG that governs traditional-method sparkling wine from grape blend through lees-aging minimums, with secondary fermentation in bottle mandatory across the entire zone.

The estate's sparkling wines carry the Franciacorta DOCG label. Its Vintage Collection range spans several cuvées: Satèn, Blanc de Blancs, Rosé, Dosage Zero, and the prestige Annamaria Clementi. Still wines are also produced but the sparkling range is the commercial and reputational core.

Where the wines begin

Erbusco sits at the heart of the Franciacorta DOC zone, on the south-facing moraine hills between Lake Iseo and the city of Brescia in Lombardy. The landscape is post-glacial: glacial debris left a varied mix of clay, silt, sand, and gravel across the zone, with the best sites on elevated terraces where drainage keeps the vines from waterlogging in wet vintages.

The 253 hectares span multiple plots across the Franciacorta zone, all farmed organically and hand-harvested. Soils vary by parcel but the moraine geology gives a mix of clay and sand with gravel pockets that drain readily and keep acidity higher than in heavier lowland soils. The Vintage Collection Satèn draws from 27 certified organic parcels, with parcel-level bar-coded crates tracking each lot from vine to press.

All harvesting is done by hand into stackable 16-kilogram crates, each bar-coded to trace the parcel of origin through the entire production process. Before pressing, grapes pass through the Berry Spa, a four-lane facility adapted from salad processing technology: three temperature-controlled water baths at 12 degrees Celsius with citric acid treatment, followed by cold-air drying. The purpose is to remove surface residues and prevent oxidation before the fruit reaches the press.

The cellar operates entirely on gravity flow. Vats move on specialized lifts at minimal speed so that blending does not disturb the wine. At disgorgement, bottles enter a nitrogen-sealed chamber, where the removal of the temporary cap and insertion of the final cork happen inside a positive-pressure nitrogen environment. The patented system, filed in 2005, reduces oxidative shock at the point where most sparkling wines are most vulnerable.

Vintage Collection Satèn is 85 percent Chardonnay and 15 percent Pinot Bianco from 27 certified organic parcels, aged 53 months on lees and finished as Brut at 12.5 percent alcohol. The lower carbonation pressure of the Satèn style gives a softer mousse and a rounder, creamier weight on the palate than standard Franciacorta.

A bottle to begin with

Vintage Collection Satèn is the clearest first bottle from Ca' del Bosco. It is 85 percent Chardonnay and 15 percent Pinot Bianco, grown on 27 certified organic parcels and aged 53 months on lees, nearly double the vintage Franciacorta minimum. The lower carbonation pressure of the Satèn style is a defined appellation category, not a winemaking quirk, and at Ca' del Bosco it produces exactly what the category promises: a creamy, smooth Franciacorta with a soft mousse, peach and lemon verbena on the nose, almond and vanilla in the mouth, and a dry, yeast-edged finish. Nothing here is sharp or austere.
