Why it matters
The producer
Sandra Estévez is Privat's Head of Winemaking. She trained in agricultural engineering and grew up in a family of winemakers. Privat started as a sparkling wine brand within the Cava category and committed to organic vine growing from the outset.
All Privat products are made from grapes grown using certified organic methods, without herbicides or pesticides. The winery uses the traditional Cava method, including a second fermentation in bottle, alongside newer technology for safety and quality.
Place and vineyards
Where the wines begin
Finca L'Almirall in Castellví de la Marca covers 100 hectares and includes vineyards and forests that promote biodiversity. Some of its vines are more than 40 years old.
The site has calcareous and clay soils, a Mediterranean climate and altitude that allow the grapes to ripen evenly. Harvest for Cava begins early to retain high acidity and low potential alcohol. Most of the harvest is mechanized. A small bush vine plot is hand harvested and receives personalized attention.
