The producer

Domaine Alice et Olivier De Moor gives each cuvée individual attention in a minimal intervention cellar. Alice and Olivier De Moor blend for wines they like and want to drink. The cellar approach leaves the wines, grapes and terroir to speak for themselves.

In 2017, Alice and Olivier De Moor acquired some Vau de Vey and took a sharecropping contract in Mont de Milieu. Both are premier cru vineyards, adding named premier cru sites to a range that also covers broader Chablis, Saint-Bris and Bourgogne categories.

Where the wines begin

Courgis is a small village south of Chablis. The domaine's holdings extend across Chablis, Saint-Bris and Bourgogne appellations. An appellation is a regulated geographic category on a wine label, so these names distinguish the bottles by place as well as grape variety.

Vineyards and cellar

One Aligoté vineyard was planted in 1902. Trees are planted around vineyard perimeters as part of the domaine's agroforestry practice.

All wines are barrel fermented and matured. Sulfur additions are reduced and used primarily at racking and bottling. Barrel fermentation keeps fermentation in oak, while maturation extends the wine's contact with the vessel after fermentation. Cellar work remains simple, with individual attention to each cuvée.

The range in view

The range includes Bourgogne Aligoté, Chitry, Saint-Bris and Chablis wines, with premier cru bottles from Vau de Vey and Mont de Milieu. Vendangeur Masqué is the négociant project, launched in 2009 with organic grapes bought from friends. Its bottles include Bourgogne Blanc Le Vendangeur Masqué and Chablis Vendangeur Masqué.

Named Chablis cuvées include l'Humeur du Temps and Belair et Clardy, alongside Chablis 1er Vau de Vey. Saint-Bris Sans Bruit is a 2021 cuvée aged in amphora, with no residual sugar.
