The producer
Domaine Boyar is Bulgaria's largest wine exporter by volume, operating out of the Thracian Valley in the country's south. Two wineries carry the range: Sinite Skali, a purpose-built facility near the town of Sliven, and a second site at Korten. The scale is industrial and the ambition is genuinely European: more than 2,000 French, American, and Bulgarian oak casks fill the Sinite Skali cellar, and the range runs to roughly 150 products across white, red, rosé, and dealcoholized wines. Mundus Vini named Domaine Boyar Bulgaria's top winery four consecutive years, from 2021 through 2024.
The producer's export range is built around two bottles that travel well: the Ethno Sauvignon Blanc, which shifts between a Sauvignon-Sémillon blend and a varietal release depending on vintage, and the Le Jardin Red Blend, a warm-climate red that sits comfortably on Swedish restaurant lists and in Nordic retail.

Where the wines begin
The Thracian Valley runs across southern Bulgaria between the Balkan Mountains to the north and the Rhodope range to the south. The valley collects warmth. Summers are long, dry, and hot, and the growing season extends well into autumn, pushing red grapes toward full ripeness. The Le Jardin Red Blend reaching 14.5% alcohol is a direct consequence of that heat: grapes picked at full maturity in a basin designed by geography to accumulate sunshine.
Sliven sits at the northern edge of the valley, closer to the Balkan foothills, where there is more elevation and cooler air off the mountains. That marginal difference matters for white wines: the Ethno Sauvignon Blanc holds 12.5% alcohol and keeps its freshness precisely because the Sliven growing zone is not the hottest part of the valley.

Vineyards and cellar
The Sinite Skali cellar holds more than 2,000 oak casks sourced from France, America, and Bulgaria. The oak programme is broad rather than narrowly defined: American oak contributes vanilla and coconut character; French oak brings finer-grained tannin and spice; Bulgarian oak, derived from local forests, adds a distinct earthier note. All three show up in the Le Jardin Red Blend: the vanilla and plum in the tasting profile trace to the cask ageing programme, which softens the tannin on a high-alcohol red and rounds the fruit forward.
For the white wines, modern temperature control is the decisive cellar intervention. The Ethno Sauvignon Blanc's aromatic freshness at 12.5% alcohol depends on fermentation conditions that preserve gooseberry, lime, and fresh herb character in a hot-climate growing region. Without cold stabilisation and controlled fermentation, those aromatics dissipate fast in warm-country production.

The range is structured in tiers, with the Ethno and Le Jardin labels serving the Nordic export market. The full portfolio extends to 150 products across all colours and includes dealcoholized wines.
Ethno Sauvignon Blanc changes character by vintage. The 2020 is an 85% Sauvignon Blanc and 15% Sémillon blend at 12.5% alcohol. Sémillon adds body and a waxy texture to the frame, and the blend shows gooseberry, blackcurrant leaf, pear, and lime: aromatic, light, and persistent on the palate. The 2022 drops the Sémillon entirely and goes 100% Sauvignon Blanc, leaning into passion fruit, fresh herbs, and lime with a more tropical, open character. Nordic retailers describe this vintage as closer in style to a New Zealand Marlborough release than a classic European white: generous and fruit-forward at a lower price point.

A bottle to begin with
Start with the Ethno Sauvignon Blanc. The 2020 vintage, at 85% Sauvignon Blanc and 15% Sémillon, is the more complex of the two available readings: the Sémillon adds a slight roundness to the body that keeps the wine interesting beyond the first pour, while the fresh acidity and gooseberry-lime character of the Sauvignon Blanc do the aromatic work. At 12.5% alcohol, it is a precise, easy-drinking white that demonstrates what the Sliven growing zone produces when the winemaking is controlled. If the 2020 is not available, the 2022 varietal offers the tropical, open-fruited version of the same address at a similarly accessible price.
