The producer
The De Oliveira family emigrated from Portugal to Chablis during the 20th century. In 1997, Mr. De Oliveira retired and his daughter took over management. The estate practices Lutte Raisonnée, a sustainable approach that adjusts vineyard treatments to conditions.
Grapes are pressed quickly to prevent oxidation, and sulfur dioxide is added immediately to protect the must. Fermentation takes place in temperature controlled tanks, with stainless steel used throughout the vinification and ageing of the wines.

Where the wines begin
Chablis is the place named on both wines, while Fourchaume adds a named Premier Cru vineyard to the label. Chablis is the appellation used for the standard bottle; Premier Cru identifies a higher vineyard tier within the appellation. The two names mark a move from the general Chablis designation to a specific classified site.

The range in view
The range contains two wines named here: Chablis Domaine de Oliveira Lecestre 2023 and Chablis Premier Cru Fourchaume 2023. The standard Chablis has golden yellow colour with green tints, white flowers, lemon and grapefruit, followed by ripe fruit and a long, fine finish.
Fourchaume is 100% Chardonnay. It uses traditional low temperature fermentation in stainless steel tanks and 12 months of ageing in stainless steel. The wine is rich and balanced, with peach aromas and spice notes.
