Why it matters

The producer

Stem fermentation leaves grape stalks with the fruit during fermentation. Stems can add tannin and spice, but Jacques Seysses believed mature stems reduced hard tannins in the resulting wine. Domaine Dujac changes its stem percentages by vintage.

Reduction describes a low oxygen condition in wine that can bring smoky or struck match aromas. Since becoming organic, the domaine has observed more reduction in its wines.

Place and vineyards

Where the wines begin

Morey-Saint-Denis is in Burgundy's Côte de Nuits, while Puligny-Montrachet is in Côte de Beaune. The two whites carry different Burgundy subregional addresses. Premier Cru identifies a vineyard category below Grand Cru, and both labels pair that category with a named site, Les Monts Luisants or Les Folatières.

The range in view

The range has two white Premier Cru bottlings. Morey-Saint-Denis Premier Cru Blanc Les Monts Luisants is Chardonnay grown on clay and limestone, with aromas of citrus, white flowers, toasted nuts and pastry cream. Puligny-Montrachet Premier Cru Les Folatières has ripe white peach and citrus confit, with spicy and floral elements.

The bottles keep their sites separate: one is a Morey-Saint-Denis wine from the Côte de Nuits, the other a Puligny-Montrachet wine from the Côte de Beaune.
