Why it matters
The producer
François Chidaine works in Montlouis in the Loire Valley, with Chenin Blanc as the central grape and other regional varieties in the holdings. The domaine uses regenerative agriculture with no till farming and permanent cover crops of indigenous and sown plants. It is certified biodynamic.
Chidaine vinifies parcel by parcel with indigenous yeasts and very low intervention. Grapes receive gentle whole cluster pressing before fermentation and maturation in stainless steel, large demi muids and French oak barrels. He describes the aim as allowing grapes and terroirs to express themselves with maturity and balance.

Where the wines begin
The domaine is rooted in Montlouis and extends across Vouvray and Touraine. Chenin Blanc dominates the plantings, while other regional varieties are also farmed across the holdings. Les Choisilles carries the Montlouis place name, linking the still wine directly to the domaine's primary area.

The range in view
The range covers two formats. Les Choisilles is a Montlouis Chenin Blanc wine, full bodied and fruit laden, with citrus zest, yellow stone fruit, white flowers and a flinty mineral core. Méthode Traditionnelle Brut Nature is a sparkling wine with toasted cashew, dried citrus and smoky caramel, held by vivacious acidity and a fine mousse.
