Why it matters
The producer
Domaine Guyon makes red wines from Vosne-Romanée, Savigny-lès-Beaune and other named Burgundy appellations, alongside white wines from Nuits-Saint-Georges and Morey-Saint-Denis. The range moves from Bourgogne Rouge through village and Premier Cru wines to Échezeaux Grand Cru and Clos Vougeot Grand Cru.
Jean-Pierre Guyon began organic viticulture in 2006, and the domaine achieved ECOCERT organic certification in 2012. In the cellar, he employs whole bunch fermentation and keeps sulfur intervention minimal, typically holding sulphites until spring unless the wine needs them earlier.

Where the wines begin
The appellation names carry the range from a regional Burgundy red to village, Premier Cru and Grand Cru wines. Vosne-Romanée appears in Les Charmes de Mazières, En Orveaux Premier Cru and Les Brûlées Premier Cru. Savigny-lès-Beaune contributes Les Peillets Premier Cru, while Échezeaux and Clos Vougeot carry Grand Cru status.
Premier Cru and Grand Cru are vineyard levels within Burgundy's hierarchy. The category printed beside the place changes the label's position and marks the kind of site represented by the bottle. White wines extend the range into Nuits-Saint-Georges and Morey-Saint-Denis.

Vineyards and cellar
Guyon employs whole bunch fermentation, leaving the stems with the grapes during fermentation. Stems can add perfume, spice and tannic grip, giving the wine a more textured shape than fully destemmed fruit. The practice appears across a range that includes village wines, Premier Crus and Grand Crus.
Sulphites are typically held until spring. Guyon can add them earlier when he feels the wine needs them, keeping the intervention responsive to the condition of each wine instead of following a fixed date.

Bourgogne Rouge is the regional red in the range. Chorey-lès-Beaune Les Bons Ores is marked by 80% centenarian vines. Savigny-lès-Beaune Premier Cru Les Peillets and the Vosne-Romanée wines add named village and Premier Cru levels.
The highest red tier includes Échezeaux Grand Cru and Clos Vougeot Grand Cru, both wines with concentration and firm shape. White wines appear as Nuits-Saint-Georges Blanc Les Argillats and Morey-Saint-Denis Blanc La Bidaude, giving the domaine a white counterpart to its red Burgundy range.
