Why it matters

The producer

François Tollot founded the domaine in Chorey-lès-Beaune. It is now managed by fifth-generation cousins Nathalie, Jean-Paul, and Olivier Tollot. Lutte raisonnée farming avoids synthetic fertilizers. The domaine favors old vines of Pinot Fin, a refined Pinot Noir clone, for its red wines.

Grapes are 99% de-stemmed and handled as lightly as possible before fermentation. Red wines ferment for 10 to 12 days with pump-overs and twice-daily pigeage. Pigeage means punching down the grape cap, bringing the skins into contact with the fermenting wine.

Chorey-lès-Beaune is the village named in the domaine's founding, while the portfolio reaches across Côte de Beaune appellations. Appellation names attach a Burgundy wine to its geographic origin, so place appears directly in the range. The named Chorey bottle carries Chorey-lès-Beaune on its label.

The portfolio includes the red Chorey Les Beaune Pièce du Chapitre Monopole Tollot-Beaut, Clos du Roi, and Corton-Bressandes. The Chorey bottle is a red Côte de Beaune wine, while the other two names also appear in the range. Monopole is a Burgundy term for a named vineyard controlled by one domaine.

The 2022 Chorey-lès-Beaune opens with sweet plums, roses, and violets, with a hint of iron. Its tannins are soft and silky.
