Why it matters
The producer
William Trouillet represents the fourth generation of family winemaking at Domaine Trouillet. The domaine produces white wines only, across the Mâconnais appellations. Its work combines mature vineyard material with a cellar divided between wood and stainless steel, while sulphur is reserved for bottling and stabilization.
The range is built around Pouilly-Fuissé and neighbouring appellations, with Aux Chailloux as the flagship cuvée. William's approach is incremental, with attention to vine age and a preference for cellar choices that keep the wines connected to their vineyard origins.

Where the wines begin
Domaine Trouillet sits at the foot of Roche de Solutré, in the hamlet of Pouilly. The vines are planted across six communes, giving the domaine fruit for several Mâconnais appellations and a range of white wine labels with different place names.
Pouilly-Fuissé, Saint Véran, Pouilly Vinzelles, Pouilly Loché and Mâcon Solutré each name a regulated place on the bottle. The range therefore extends beyond one village label while remaining within the white wine geography around Solutré Pouilly.
In the cellar
Vineyards and cellar
The domaine has held HVE level 3 certification since 2018. Haute Valeur Environnementale is a French environmental framework assessed through indicators such as biodiversity, plant protection and water management.
Half of the production is vinified in barrels or wooden tanks, with the remainder in stainless steel. Wood permits gradual oxygen exchange and can broaden texture, while stainless steel provides a more direct fermentation environment. Vinification takes place without sulphur, which is added at bottling for stabilization.

Pouilly-Fuissé Aux Chailloux is the flagship and the richest wine in the range. Its premier cru status places it above the domaine's broader appellation wines in vineyard hierarchy, while the other labels extend the range across several Mâconnais place names.
