The producer
Ruth Fernández studied viticulture and oenology at the Universidad Autónoma of Madrid before beginning her career in Languedoc. She is now Dominio de Punctum's oenologist and production director, handling the technical work behind a family estate in Cuenca province.
Cristina Fernández is the CFO and a Demeter Farmer in Vineyard and Wine Producer in Cuenca. The estate's wines use grapes grown exclusively by the Fernández family. All of the wines are organic, biodynamic and vegan, placing farming and production under one stated system.
Place and vineyards
Where the wines begin
The vineyards lie in Cuenca province under a continental Mediterranean climate. The estate places its vineyards at roughly 700 to 800 metres above sea level. That elevation can lengthen ripening while helping grapes retain freshness, especially in a warm continental setting.
The range carries the VdlT Castilla designation. Its three principal bottles cover red, rosé and white wine, with the grape varieties changing from one colour to the next.
In the cellar
Vineyards and cellar
The producer uses no chemicals in either the field or the winery. Its biodynamic practices include following lunar cycles, applying natural preparations, and encouraging biodiversity among the vines. These are direct farming choices, with work timed by the lunar calendar and vineyard life treated as part of the growing system.
Solo Vino Tempranillo Organic was spontaneously fermented in stainless steel, then rested for a time in American oak. No sulfur was added during vinification or before bottling. Stainless steel preserves the grape's direct fruit character, while American oak adds contact with wood and oxygen during the period of ageing.

The range in view
The range moves across three colours. Solo Vino Tempranillo Organic 2024 is the red, made from Tempranillo. 99 Rosas Rosé Organic 2025 is a blend of 90% Bobal and 10% Garnacha. 99 Rosas Sauvignon Blanc Chardonnay 2025 is a white made from Chardonnay, Sauvignon Blanc, Viognier and Viura.
The red is a single grape wine, while both 99 Rosas bottles combine several grape varieties. The labels therefore move from a named Tempranillo to blends built around different colour and aromatic profiles.
