The producer
Freixenet is the largest producer of traditional method sparkling wine in the world, and the name that carried Cava onto tables in every major export market. Its base is Sant Sadurní d'Anoia, a small Catalan town south-west of Barcelona that serves as the capital of the Cava appellation, and its output runs to more than 114 million bottles a year.
The house grew from the union of two Catalan families. The Sala family had been making wine since 1861, trading under the Casa Sala name. When Dolores Sala married Pedro Ferrer in the early twentieth century, the combined enterprise eventually traded under the name of the Ferrer family's old land holding, La Freixeneda. That compound history ended cleanly in 2026, when the German sparkling wine group Henkell and Co. completed its purchase of the remaining shares held by the Ferrer and Bonet families, achieving full ownership of a company it had first entered with a majority stake in 2018.

Where the wines begin
Sant Sadurní d'Anoia sits in the Alt Penedès comarca, roughly forty kilometres from Barcelona, in a basin formed by the Anoia and Noia rivers. The town holds more Cava cellars than anywhere else in the appellation, and the appellation itself stretches across several Catalan provinces and a handful of other Spanish regions, though Penedès remains its historical and commercial heart.
The Penedès plateau sits on a base of limestone and clay soils at elevations that moderate summer heat and preserve the acidity in the grapes. Parellada in particular is planted higher up the slopes, where cooler overnight temperatures slow ripening and extend the growing season. The resulting grapes hold more natural freshness, which translates directly into the acid line and mousse character in the finished wine. Freixenet draws from this appellation landscape at scale, sourcing across the established Cava growing zones rather than from a defined estate.

At the scale Freixenet operates, production depends on sourcing across the appellation rather than farming a single defined estate. The traditional Cava grapes, Macabeo, Xarel.lo, and Parellada, are grown across Penedès by growers supplying the house, with higher-elevation Parellada parcels contributing the freshest, most delicate fruit.
In the cellar, the traditional method is the governing process. Base wines undergo primary fermentation, then are bottled with a small addition of sugar and yeast to trigger secondary fermentation inside the bottle. The wine ages on the lees, accumulating the faint bread and pastry notes that come from extended yeast contact, before riddling collects the sediment, disgorging removes it, and a dosage of sugar and wine adjusts the final sweetness level. Brut dosage on Cordon Negro sits at a level that leaves the fruit vivid and the acidity forward.

The Freixenet range moves from its oldest commercial label through to a set of still wines aimed at a different drinking occasion.
Carta Nevada was launched in 1941 and remains the house's longest-running line. Made from traditional Cava varieties, it is a brut sparkling wine with a slightly fuller character than Cordon Negro.

A bottle to begin with
Cordon Negro Brut is where to start. It is a blend of Macabeo, Xarel.lo, and Parellada, made by the traditional method in Sant Sadurní d'Anoia and aged on the lees before disgorging. The bottle has been in production since 1974 and the format, frosted black glass with a gold net wrapping, remains one of the most widely distributed sparkling wine packages in the world.
