The producer
The name Penley dates to 1947, when Reginald Lester Tolley married Judith Anne Penfold Hyland. The estate itself came later, when Ang and Bec Tolley and their brother Kym bought Coonawarra land, planted vines and began making their own wine in 1988. Cabernet Sauvignon was the first stated planting, tying the family venture to the grape for which Coonawarra is best known.
Penley built its on-site winery in 1995. That move gave the young Coonawarra estate a practical home for its growing range, whose labels now extend from everyday Cabernet to bottles designed to hold their dark fruit, tannin and spice over time.

Where the wines begin
Coonawarra lies in the Limestone Coast of South Australia. A cool maritime influence and a long, even ripening season give Cabernet time to develop flavour without abandoning lift, which is why the regional style is associated with dark fruit, fine tannin, mint, herbs and spice rather than simply weight.
For a bottle labelled Coonawarra Cabernet, the regional name is doing useful work. It points to a place where Cabernet Sauvignon is especially established, and where ripeness can sit alongside fresh acidity and aromatic detail.
In the cellar
Vineyards and cellar
Penley describes its approach as vineyard-led: the Coonawarra setting comes first, rather than a fixed formula applied to every Cabernet. The winery built in 1995 provides the estate’s cellar base, while the current team uses different approaches across the range so that one Cabernet can be bottled young and oak-free while another carries more tannin, oak and cellar time.
The estate also documents Sustainable Winegrowing Australia auditing, tracked environmental measures and lower-impact packaging. Those choices concern how the wine is grown, monitored and packed; they are not a shortcut to a flavour claim, but they are part of the material life of a Penley bottle.
Wines to know
The range in view
Cabernet Sauvignon supplies the range’s spine. Penley has described having as many as seven Cabernet expressions available at one time, using the grape for a youthful Preservative Free Cabernet, the oak-free concrete Egg Cabernet, a whole-bunch Cabernet, Phoenix and longer-lived wines such as Helios.
The differences are concrete. The Preservative Free Cabernet is bottled young without oak; the concrete Egg Cabernet spends months on skins, using grape tannin for a creamy, medium-bodied texture; and the whole-bunch Cabernet is made for purple fruit, flowers and perfume. Helios takes the darker route, with dense, brooding fruit and medium-to-full body, while Phoenix carries a little tannin and a touch of oak. Shiraz sits alongside these Cabernets as the estate’s other established red grape.

A bottle to begin with
Choose Penley Steyning Cabernet Sauvignon 2022. It is a 100% Coonawarra Cabernet Sauvignon, placing the estate’s first and central grape directly in the glass. The wine is full-bodied but not simply heavy: plush black fruit, ripe cassis, leather and spice fill the mid-palate, while powdery, fine tannins gather tightly around the fruit.
