Why it matters

The producer

U Més U Fan Tres translates from Catalan as "1+1=3," the kind of name that sounds like a manifesto before you open a bottle. The Piñol family founded the project in Penedès in 2000, and the third generation, Oriol Piñol as winemaker and Maria Piñol as owner, runs it today. The range works across two legal zones: DO Cava, the multi-regional designation that authorises traditional-method sparkling wine across much of northeastern Spain, and DO Penedès, the geographically specific appellation covering both the still wines and the family's home ground in Alt Penedès.

What shaped the estate's character was not scale or prestige but a sequence of technical decisions that arrived well ahead of market demand. The Piñol family was farming organically before certification was in place and made one of the first no-sulfite-added cavas in Catalonia in 2014, four years before the full range received organic certification. That gap matters: the no-sulfite cava was a deliberate production choice, not the final step in a compliance programme.

Place and vineyards

Where the wines begin

The vineyards sit in Alt Penedès at roughly 350 metres elevation. The altitude moderates ripening through cooler nights, slowing sugar accumulation and preserving the acidity that keeps the cava range fresh. Penedès as a region sits inland from the coast between Barcelona and Tarragona, with the Montserrat massif to the north creating a natural climatic boundary. The calcareous, chalky soils that show up in tasting notes for both the Cava Brut and De Llevant match the limestone-rich geology that underlies much of the plateau. The Cal Ferrando vineyard, named in connection with the De Llevant still wine, is the one confirmed parcel name in the range.

DO Cava covers a broad zone and permits the label on traditional-method wines from approved grape varieties. DO Penedès is the narrower, place-specific designation for still wines and sits at the heart of the family's physical address.

Vineyards and cellar

The cava range is built on the classic Penedès trio of Xarel·lo, Macabeo, and Parellada, grown organically at 350 metres. Xarel·lo brings weight to the blend; Macabeo contributes floral lift and freshness; Parellada adds aromatic delicacy. The 1+1=3 Cava Brut uses 40% Xarel·lo, 35% Parellada, and 25% Macabeo. Cygnus Albireo spends 15 months on lees before disgorgement, which builds the subtle ageing notes in the finished wine without overwhelming the apple and white fruit character.

De Llevant is made from 100% Malvasia de Sitges from the Cal Ferrando vineyard, a grape variety native to the coast south of Barcelona that brings a naturally softer aromatic register. The cellar splits the harvest: 85% is fermented conventionally without skin contact, while 15% goes through orange wine maceration. Both portions then rest together in ceramic amphorae for three months. Amphorae neither add oak character nor strip oxygen exposure to zero; they allow very slow, graduated breathing, which integrates the conventional and skin-contact fractions and builds texture without obvious wood influence.

The range in view

The range divides into three cavas and one still white, with each cava sitting at a different level of complexity and lees contact.

Cygnus Sador is the entry-level cava, priced under €15, with a honeyed profile and aromas of white peach, mandarin, and pear. It carries a softer, riper register than the mineral-driven Cava Brut, with delicate fruit at the centre rather than citrus and chalk.

A bottle to begin with

Start with Cygnus Sador. Priced under €15, it won Tim Atkin's 2025 Catalan Sparkling Wine of the Year in the entry level category, selected from a tasting of more than 250 wines. The profile is honeyed and accessible: white peach, mandarin, and pear aromas with delicate fruit at the centre and a fresh, mousse-driven finish. It does not lead with mineral austerity, which makes it the most immediately approachable wine in the range and the clearest illustration of what organic farming at altitude in Penedès can produce at a price that invites the gamble.
