Why it matters
The producer
Roman Fabig started his winery in Moravia in 2011 with a micro-batch bottling and a decision that has governed every vintage since: Sauvignon Blanc would be the work, and it would be done as well as possible rather than spread across many varieties. Today more than 80% of his annual production of 50,000 bottles is Sauvignon Blanc, all farmed organically. The flagship SPECTRUM is a blend of Sauvignon Blanc from his finest vineyard parcels, made to age.
The winery building makes the same argument as the wine range: basic geometric shapes, concrete, no decorative reference to tradition or family legacy. Fabig describes it as young and innovative rather than typically family-owned.

Where the wines begin
Moravia, the eastern wine region of the Czech Republic, sits at a latitude where the growing season runs long and cool relative to the warmer wine zones further south and west. Summers bring enough warmth to ripen Sauvignon Blanc, but the harvest window extends into autumn, giving the grape time to develop aromatic complexity while holding its natural acidity. That combination of ripeness and acidity is what drives Fabig's focus on this variety in this place: Sauvignon Blanc thrives where the season closes slowly, and Moravia provides that rhythm.

Fabig farms organically, without synthetic treatments. The decision is practical rather than promotional: he describes it as logical thinking oriented toward lasting quality rather than responding to current trends. The vineyards supply Sauvignon Blanc for all tiers of the range.
In the cellar, the focus is on preserving acidity and developing the capacity for long aging. The range runs from the broader Sauvignon Blanc bottlings to SPECTRUM, a cuvée blended from the finest parcels.

The range in view
The FABIG range is organised around Sauvignon Blanc at every level, with SPECTRUM at the top. SPECTRUM is a multi-parcel blend drawing from the winery's best vineyard plots, bottled at 12.5% alcohol with 7.6 g/l acidity and 2.3 g/l residual sugar. That residual sugar figure places it firmly in dry wine territory; the acidity is high enough to carry the wine through extended bottle age. The other Sauvignon Blanc bottlings form the broader base of the range, giving access to the house style before SPECTRUM.
A small portion of production covers varieties other than Sauvignon Blanc.
