The producer

In 1859, Pere Olivella i Carol bought a hillside masia in the Penedès and planted the property to vines. He did not know he was founding a wine dynasty. He was acquiring a farm. Five generations later, the same masia, Masia Ca Pere del Maset, produces cava under his name.

The Cava DO is a large Spanish appellation for traditional-method sparkling wine, covering territories across Catalonia, Aragon, Rioja, and beyond, though its historical centre sits in the Penedès. Olivella Galimany is a Penedès estate producer: the grapes come from the hillside around the masia, not from contracted fruit across the appellation. The blend is the classical Cava trio of Macabeu, Xarel·lo, and Parellada. Farming is certified organic.

Where the wines begin

The Penedès sits inland from Barcelona between the coastal range and the pre-Pyrenean foothills. It is warm and Mediterranean in summer, cooler at elevation, and dry enough that the native grape varieties, Macabeu, Xarel·lo, and Parellada, have evolved to hold acidity under those conditions. The three varieties divide naturally by altitude: Macabeu performs on the lower, warmer terrain; Xarel·lo occupies the middle slopes; Parellada grows best higher up, where nights are cooler and acid retention comes more easily.

The masia stands on a hilltop surrounded by vineyards, olive groves, and Mediterranean pine forest. The hillside setting moderates temperature and provides natural drainage. Specific soil type and elevation are not confirmed in the verified sources; the physical picture is a knoll of cultivated and forested land, integrated and farmed as a whole.

The estate vineyard is farmed by artisanal and traditional methods under organic certification. The grapes, Macabeu, Xarel·lo, and Parellada, are hand-tended on the hillside around the masia. For the Brut Nature, the wine rests on lees for a minimum of twelve to eighteen months. Brut Nature means zero dosage: no sugar solution is added after disgorgement, so the wine goes to market with only its own character, unmodified by sweetness correction.

The range in view

The range runs across three Cava DO tiers. The entry level is Cava de Guarda, which contains at least the Brut Nature and a Brut. The Brut Nature carries zero dosage; the Brut receives a small dosage to soften the finish. Both are made from Macabeu, Xarel·lo, and Parellada, and both age a minimum of twelve to eighteen months on lees before disgorgement.

The Cava de Guarda Superior Reserva requires a minimum of eighteen months on lees. At that ageing threshold, the secondary character from yeast contact becomes more noticeable: the bread and hazelnut notes that set aged cava apart from the fresh citrus of shorter elevage. The Cava de Guarda Superior Gran Reserva extends that ageing to thirty months minimum. Both Superior tiers are made from the same three Penedès grapes; the difference between them and the Guarda is time in bottle and the depth of secondary character that time builds.

A bottle to begin with

The Brut Nature is the right first bottle. It is zero dosage, made from Macabeu, Xarel·lo, and Parellada, aged twelve to eighteen months on lees, and carries nothing that the grapes and the time in bottle did not put there. Pale yellow in the glass, fine bubbles, apple and pear on the nose, a dry and focused palate, a long finish. No sugar correction, no softening.
