Commandaria comes from fourteen historic villages on the southern slopes and foothills of the Troodos range, north of Limassol. Vineyards sit between 400 and 900 metres. In the east, rocky volcanic slopes can be steep enough to need terraces.
The wine is made only from Xynisteri and Local Mavro. Grapes are picked late, dried in the sun before pressing, then fermented in tanks or large earthenware jars and traditionally aged in oak. Drying concentrates their sugar and gives Commandaria its sweet dessert-wine style. Honey, raisin, walnut, fig, carob, cinnamon, coffee and caramel are among the flavours often associated with it. The usual style blends both grapes, while a darker, sweeter Mavro-only version is also made.
Commandaria has EU Protected Designation of Origin status and must come from its demarcated villages. Its cultural practice joined UNESCO's Intangible Cultural Heritage list in 2021.
