The producer

Champagne Hervieux-Dumez is an independent grower producer based in Sacy, a Premier Cru classified village in Champagne. Laurent, Clément and Timothée represent the fourth generation as independent winegrowers. The current team works within a family tradition whose house style has been developed through multiple generations of expertise and is marked by balance.

André Hervieux joined the family estate in the early 1950s and expanded its operations through significant terroir investment. He entered a house founded by Henri Hervieux and Juliette Dumez after they met in Sacy following World War I. André's expansion added vineyard investment to the family's work, and the current generation continues the independent winegrower model.

Where the wines begin

Sacy's Premier Cru status is a village classification within Champagne, not the name of a single vineyard. The house is headquartered in the village, at 6 rue de Châtillon, 51500 Sacy. Chalk in the terroir is porous enough to act as a natural water reservoir, and that stored water contributes to mineral balance and sensory subtlety in the finished Champagne.

The range in view

Hervieux-Dumez Special Club is a 2018 vintage sparkling wine and the house's Club Trésors de Champagne cuvée. It combines 50% Chardonnay, 30% Pinot Noir and 20% Meunier. The house keeps its wines on lees for approximately three years. Lees ageing leaves sparkling wine in contact with yeast after the second fermentation, which can build fuller texture and added complexity. Fermentation in stainless steel tanks keeps the vessel neutral and preserves the purity of aromas brought by the terroir.
