Champagne

Champagne begins with a place, not a bubble. The vineyards lie east of Paris in a cool, northern climate where chalk and other limestone-rich soils help the vines hold water. Pinot Noir, Chardonnay and Meunier are the three main grapes. Most bottles blend grapes, villages and years, then gain their bubbles through a second fermentation in the bottle. The result can be brisk and chalky, broad and vinous, or somewhere between the two.

Four areas change the blend

Montagne de Reims is closely tied to Pinot Noir, Côte des Blancs to Chardonnay and the western Marne Valley to Meunier. Côte des Bar, farther south, returns to Pinot Noir on a different landscape. These are useful tendencies, not flavour guarantees. A house may blend across the region for consistency, while a grower may keep one village or parcel in sharper focus.

Non-vintage is the house introduction

A non-vintage brut is usually the clearest first look at a producer's style. Reserve wines from earlier harvests help keep that style recognisable from year to year. Vintage Champagne comes from one declared year and spends longer ageing before release. Rosé, blanc de blancs and blanc de noirs describe colour or grape choice rather than a ladder of quality.
