Santorini PDO includes Santorini and Thirasia. Summers are hot and dry, but morning caldera mists bring moisture during drought. Strong winds have led growers to train vines in baskets or low gobelet forms, on soils of basalt, ash, sand, pumice and andesite. Assyrtiko is tarter here than elsewhere. Nykteri is a dry-wine indication that requires at least 13.5% alcohol and three months in oak. Santorini Vinsanto comes from overripe, sun-dehydrated grapes and undergoes at least 24 months of oxidative maturation. It has dried-fruit, honey, caramel, coffee, nut and spice notes, balanced by high acidity.
