Zitsa lies on a plateau in the Ioannina district, on the western slopes of the Pindos range. Vineyards sit between 550 and 730 metres, on limestone soils shaped by Ionian Sea breezes. The plateau drops west towards the Thyamis, also known as the Kalamas, River. Debina defines the local PDO. The designation requires the grape and includes dry white, dry sparkling white and semi-dry sparkling white wines. Zitsa's elevation, limestone and cool conditions suit Debina's high acidity, low alcohol and potential for sparkling wine. In the traditional sparkling style, fermentation pauses during winter and resumes in spring. Many vineyards are fenced because wild boars and other animals seek out the grapes.
