Anchialos makes Thessaly's PDO white wines, dry, semi-dry and semi-sweet. Roditis must account for at least 75 percent of the blend, with Savvatiano also allowed. Cool sea breezes ease high summer temperatures in the vineyards. The appellation permits neither skin contact nor oak ageing, preserving the wines' primary fruit aromas.
