Anchialos is one of Thessaly's three PDO wine zones and is reserved for white wines. Roditis makes up at least 75 percent of the blend, while sea breezes ease summer heat. No skin contact or oak ageing is allowed.

Anchialos makes Thessaly's PDO white wines, dry, semi-dry and semi-sweet. Roditis must account for at least 75 percent of the blend, with Savvatiano also allowed. Cool sea breezes ease high summer temperatures in the vineyards. The appellation permits neither skin contact nor oak ageing, preserving the wines' primary fruit aromas.
