Amyndeon is one of Macedonia's main Xinomavro PDO zones. It occupies a high-elevation plateau surrounded by Vermio, Vitsi and Voras, with Vegoritida and Petres lakes shaping the landscape. Its high, cool setting gives Xinomavro a lighter, fresher profile and suits rosé and sparkling styles. PDO Amyndeon permits dry red, dry rosé, and dry or semi-dry sparkling rosé wines from 100% Xinomavro. The wider PGI Florina includes Amyndeon vineyards and permits Xinomavro in rosé and red blends that the Amyndeon PDO does not permit.
