Château-Chalon is a small Jura appellation devoted to Vin Jaune from Savagnin. The wine ages for years under voile, a veil of yeast that protects and transforms it, before bottling in the squat clavelin. It can be nutty, salty and curry-spiced. In difficult vintages, producers can decide together to declassify their wines and release no Château-Chalon.
