The Balearic Islands include the listed appellations Binissalem-Mallorca and Pla i Llevant. Mallorca's wines use Callet, Manto Negro and Fogoneu alongside Prensal, Chardonnay, Macabeo and Malvasia. Binissalem lies in central Mallorca, where gentle slopes are sheltered from northern winds by the Serra de Tramuntana. Its whites must contain at least 50% Moll and can show green apple, dried fruit, apricot and bitter almond.
