Spain's Balearic & Canary Islands chapter brings together two island wine areas. On Mallorca, Binissalem and Pla i Llevant are protected designations of origin. Regional wines use Callet, Manto Negro and Fogoneu alongside Prensal, Chardonnay, Macabeo and Malvasia. Binissalem lies on gentle central Mallorca slopes sheltered by the Serra de Tramuntana. Its Moll-based whites can show green apple, dried fruit, apricot and bitter almond. On Serra de Tramuntana-Costa Nord, Malvasia grows on seaside terraces and makes dry whites with a saline coastal note.

The Canary Islands are eight volcanic islands in the Atlantic. Trade winds and mountains form a sea of clouds that moderates temperatures, slows ripening and preserves acidity. Many vineyards remain ungrafted because the islands largely escaped phylloxera. In Lanzarote's La Geria, vines sit in pits dug through volcanic ash and sheltered by stone windbreaks. More than 35 native varieties are recognised. Listán Negro, the most widely planted red, can make red-fruited, peppery wines with moderate tannins, from fresh styles to more structured examples. Listán Blanco is often more acidic and more aromatic than mainland Palomino Fino.
